A Lemony Tart Just For Tarts

This dish, if you buy the pastry shell ahead of time, takes only twenty minutes to prepare and is a great sensual experience both to cook and to eat. Experiment with different amounts of lemon juice to get your desired tartness. Light enough to leave you fulfilled but not FILLED. I guarantee the tart in you will savor this one!

Sweet and Lemon Tart
1 1/2 cup water
3/4 cup sugar
1 tsp. grated lemon peel
1/4 tsp. salt
5 TBS corn starch

Cook and stir in double boiler (or place sauce pan in larger pan of heated water) until thick. Then add 2 beaten egg yolks and 6 tablespoons lemon juice. Pour into a pre-baked pie shell and let cool in fridge for two hours. For extra sweetness, you may add meringue.
