A Holiday Delight

At Mind Caviar we know you love indulgent foods and delicious appetizers. Just in time for the holiday season we offer you a delightful recipe which incorporates one of the most decadent ingredients of all-- caviar! We hope you enjoy these tasty treats as much as we did in our test kitchen. Offer them to guests this season and watch the little gems disappear as your guests glow with delight.

In the following recipe we are featuring American paddlefish caviar. This type of caviar was served at the White House, and is becoming a serious rival to the market share of Russian caviar in the United States. Paddlefish caviar comes in many shades, and ranges from pale grey to dark steel in color. The texture is smooth and silky and it has a rich, complex flavor. You may substitute a caviar of your choice, but with this fine and affordable caviar, you can't go wrong.

Caviar Cucumber Delights
3 large Cucumbers
12 oz. Sour Cream
1 large clove chopped garlic
3 TBS very finely chopped red onion
4 oz. American Paddlefish Caviar
Freshly ground cracked black pepper and scant salt to taste
 

Wash and score cucumbers with a vegetable peeler length-wise, removing one strip of peel and leaving one strip of peel in order to create a striped-pattern on the vegetable. Cut off both ends. Slice cucumbers into round, thick slices of about 1 inch in thickness. With a melon-baller, scoop out the seeded area being careful not to scoop all the way through the melon slices. This will create a flat melon "cup".

In a chilled metal bowl combine sour cream, chopped garlic, red onion, black pepper and scant salt. Be careful not to over-salt as the caviar will also be salty.

Heap small spoons of sour cream mixture onto your sliced cucumber "cups".

Top sour cream and cucumber "cup" with a dollop of caviar. 

Arrange on a festive tray. 

Serve immediately or chill for up to one hour before serving.

The blend of flavors is superb. You will thrill caviar lovers with this recipe. We have even served these to people who don't usually like caviar alone, and they have loved the subtle flavor combination. Enjoy!
